Healthy lunch anyone?

I love a healthy lunch. This one is quick and easy to prepare and it’s simply delicious.

‘What will I need?’ I hear you ask. Read on, I promise the whole process will take less than 5 minutes!

  • A tortilla wrap – I used beetroot wraps from M&S
  • A tablespoon of hummus
  • A bunch of rocket
  • 5-6 cherry tomatoes
  • Half an avocado
  • A handful of sprouted chickpeas or any beans of your choice
  • Olive oil
  • Salt
  • Tabasco or hot chilli sauce

Put a grill pan on the stove and ensure it gets really hot. Spread the hummus on one side of the tortilla, add the rocket, tomatoes, avocado and chickpeas. Add a pinch of salt, a drizzle of olive oil and Tabasco for extra hotness. Make sure you fill it near the centre. Fold the bottom up, then fold in the sides, roll it up and put it on the pan. After a minute or so, turn it up side down and grill for another minute.
