Energy balls recipe
Personally, I don’t tend to snack much but I know that many people do and they often ask me for ideas for something sweet that they can prepare quickly and easily .
These lovely energy balls are great for a pre or post exercise snack, to get over your morning or afternoon sugar craving or just as a healthier snack idea. They are rich of goodness (and no added sugar) and 1-2 balls per person should be enough to keep you going! The ingredients listed below make 16-18 balls. I love adding the optional ingredients for an extra kick! Give it a go and let me know how you get on!
Ingredients:
100g pitted dates
100g desiccated coconut
100g cashew nuts (or other nut of your choice: I have made them before with almonds, hazelnuts or walnuts)
A tablespoon coconut oil
Water as needed
A tablespoon of cocoa powder
Optional:
A pinch of salt
A pinch of chilli pepper flakes or an inch of fresh ginger (peel removed)
A teaspoon of cinnamon
Method:
Put all ingredients with the exception of the water in a food processor (a powerful blender would do) and blend for 3-4 minutes until thoroughly mixed. If the mixture looks dry, add some water. Put the cocoa powder into a plate, roll the mixture into balls and roll the balls into the plate so they get covered in cocoa powder. Put in the fridge for a few hours to set. These balls can be kept in the fridge for up to 2 weeks.
